Remove the membrane from the back of the ribs. You can gently pry it off using a blunt knife or the back of a spoon.

Step 3: Allow the Rub to Penetrate

Prepare your smoker by using 1.5 kilos of hardwood lump charcoal.

If you have an Electric Charcoal Starter Wand, light the charcoal using it. Alternatively, you can use a chimney or firelighters.

Attach the Flaming Coals Temp Master Pro to the side of your Offset Smoker.

Remove the bottom vent and replace it with the adapter plate.

Attach the fan to the control box, and set the desired temperature to 121 degrees Celsius (250 degrees Fahrenheit).

Step 6: Smoke the Ribs

Place the seasoned ribs into the smoker and close the lid.

Let the ribs smoke for one hour, allowing the flavours to develop.

Step 7: Keep the Ribs Moist

After one hour, check the ribs and spritz them with apple juice to maintain moisture.

Step 8: Monitor the Ribs

After two and a half hours of smoking, check the ribs for tenderness.

Once the ribs are tender, carefully remove them from the smoker.

Step 9: Wrap and Continue Cooking

Prepare a generous amount of aluminium foil.

Spread butter, brown sugar, and honey over the ribs, then wrap them tightly in the foil.

Step 10: Return to the Smoker

Place the wrapped ribs back into the smoker and continue cooking for another two hours.

Step 11: Apply the Sauces

After two hours, it's time to sauce the ribs.
