Perfectly Roasted Chicken on a Jumbuck Mini Spit
There's nothing quite like a roasted chicken. Juicy, tender, and packed with flavour, it's the perfect meal for any occasion. But roasting a chicken can be tricky - unless you have a jumbuck mini spit! In this blog post, we'll show you how to cook a whole chicken on our jumbuck mini spit - it's so easy even a beginner can do it!
Method
1. Grab some paper towels and pat your chickens dry this will help to create a nice crispy skin!
2. Using butcher's twine, it’s time to truss your chickens. Basically you need to secure the wings and legs in place so they don’t flop down during the cooking process and burn.
3. Season your chicken with your favourite chicken rubs. In today’s cook, we are using two excellent Australian rubs. Meat Graffitis Smokey Chipotle and Atomic Chickens Charcoal Chicken rub.
4. Attach your chickens to the skewer using chicken prongs and a double ended prong if you have access to one. Pro-tip: have your chickens facing opposite directions to ensure your skewer is properly balanced.
5. Light your charcoal, place your skewer onto the spit and turn on the motor.
6. After 85 minutes of cooking over high heat it’s time to check the internal temperature of your chickens. We are looking for anything above 75 degrees celsius. Which is food safe for chicken.
7. Remove from the spit, serve immediately with the delicious Kosmos Q Raspberry Chipotle sauce for an extra flavour kick!
