Method:

Step 3: While the chicken is cooking it’s time to prepare a pico de gallo. Dice your onion, tomatoes, and jalapenos and chop your coriander in a bowl, squeeze in fresh lime juice and lightly season with kosher salt. Mix thoroughly.
Step 4: Once your chicken reaches 150°F or 65°C it’s time to sear the chicken directly over the charcoal. Cook until your chicken probes at a minimum of 165°F or 74°C
Step 5: Remove your chicken from the kettle BBQ and slice.
Step 6: Assemble your tacos. Lay out your tortilla load with the sliced chicken, cheese and pico de gallo.
Step 7: Place your tacos onto the kettle bbq plancha (hotplate). Place the Flaming Coals Burger Press on top of the taco to help it form shape and cook to perfection. Flip when you hit the desired level of crispiness.
Step 8: Repeat with all your tacos. Once completed eat immediately!
